No need to reinvent the wheel. Try classic dishes like prosciutto-wrapped pork tenderloin, anything with mushrooms, or stew over the stove for a while with oeufs en meurette. These bottles cut through the fat with finesse and a loosely woven tannin.
Drink When
You want to warm the hearth with old school California charm. Enchanting acidity keeps it real in the kitchen and the conversation. Verticals pair best with friends and food, but you get to decide.
Martha's Notes
This vertical invites you to explore Pinot Noir as shaped by Mother Nature: the 2021 season followed a dry, cold winter with moderate summer heat, resulting in a small crop and a wine that is delicate yet concentrated in flavor; the warmer growing season of 2022 produced a wine that is immediately more expressive, with darker berry and tea notes; and the 2023 vintage, which benefited from an even and much longer growing season, shows a firmer structure today and holds great promise for the future.
Specifications
Varietal:
100% Pinot Noir
Vineyard:
Pinot noir from Hawkeye Ranch, Redwood Valley, Mendocino County; dry farmed (non-irrigated), practicing organic vineyard; gravelly loam soils.
Vinification Notes:
Our winemaking follows a deliberate yet minimalist approach, mirroring the philosophy applied in the vineyard: work with what nature provides, not against it. All wines were fermented naturally, whole-cluster (stems intact), in sealed tanks for a few days, utilizing a semi-carbonic maceration technique. From there, the fermenting juice and unique flavors emerging from each vintage guide the process, determining how long to allow tannin to continue extracting from the grape skins and stems. Each wine was pressed before reaching complete dryness, then allowed to finish fermentation naturally in neutral oak barrique for about 10 months before bottling.
Serving Temp:
Cellar // 55-60°F // 13-16°C // This bottle should be cold to the touch, but not frosty.
